The easiest Crockpot BBQ Chicken
The heat has been rising this summer, as usual. Yet each year around this time, I feel as if I am melting from the outside in.
Just getting Hangry. Don’t mind me.
The last thing I want to do after running around with the kiddos each day is get in the hot kitchen and cook. Better yet, stand outside in the heat, over a burning grill.
I decided to throw a few things into the crockpot the other morning.
Best idea I have had in a while!
I absolutely love having things cook in the crockpot all day. Each time I walk into the kitchen, the smells just out me into the best mood. It really is something nostalgic. Makes my house feel like a home.
I love to cook in my crockpot in the colder months, and need to start implementing this cooking style more often throughout the year.
This recipe was extremely easy, and is so versatile. Once the Bar-B-Ques chicken is ready you can eat it in many different ways. It’s great for families who all want something a little different.
I ate this chicken over a small salad with black beans, corn, avocado and a jalapeño ranch dressing. So stinking good.
My kiddos ate this chicken in a small sandwich with a side of corn.
My husband ate it over a bowl of rice, black beans and corn.
It would be superb on a pizza with a little more bar-b-que sauce and cilantro. Or in a wrap for an on-the-go meal. The possibilities are endless.
Bar-B-Que Chicken Recipe
Like I said, this whips together in no time flat. I am pretty careful with putting chicken in the crockpot, as I have had chicken get tough before. I am careful to not cook it too long, as well as make sure it reaches the desired cooking temperature in order to be considered safe.
In the morning, I gathered the ingredients. This recipe didn’t call for much.
- 2 lbs. good quality chicken breasts
- one sweet onion, sliced
- 2 tablespoons garlic. (I didn’t have any fresh, so I used granulated.)
- 1 cup of your favorite BBQ sauce. Mine was gluten free and dairy free. Or you can make your own.
- 1/2 cup loosely chopped cilantro
Easy peasy. Grease the sides of your crockpot with a little olive oil. Throw the onions in the bottom of the crockpot. Add in the chicken, bbq sauce, garlic, S & P, and cilantro.
Cook on low heat for 8 hours (or high for 4-5 hours). Shred chicken in the crockpot with two forks, then add in 1/4 cup more sauce, if necessary. Cook on low for 30 more minutes.
Serve how you would like. Ta-da!! Dinner with hardly any effort.
